Helping curing Mondays bad reputation by starting the day off with nothing but yuminess. Golden baked eggs with crispy proscuitto & wholemeal toast. Maybe not the best if you are in a rush during the week but it only took 15mins to cook & 10mins prep, plus low fat, good fats & protein to keep you fuller longer

Ingredients

  • 4 thin slices proscuitto roughly chopped
  • 1 handful sundried tomatoes, thinly sliced
  • 4 eggs
  • 30 gm feta cheese, crumbled
  • 50 gm parmesan cheese
  • 1 tablespoons fresh basil, chopped (dried works fine)
  • 1 tablespoons minced garlic
  • Pepper and salt

Baked eggs with proscuitto and feta Directions

  1. 1. Preheat oven to 180. Grease 2 large ramekins.
    2. Place prosciutto on a baking tray. Cook in oven until crisp or 5mins
    3. Combine, prosciutto, eggs, feta, Parmesan & basil evenly into 2 ramekins. Crack 2 eggs into each ramekin.
    4. Place in oven & cook for 12mins or until set.
