Cashew cookie dough bars


What a pleasant 3pm pick me up treat. I stumbled across this recipe on and am so glad I did. "Cashew Cookie Dough Bars" (vegan, raw & gluten free) it's one of my faves now plus NO BAKING and only 3 ingredients

  • 1 cup raw unsaltaed cashews
  • 10 medjool dates, pitted
  • 1 pinch sea salt

Cashew cookie dough bars Directions

  1. 1. Place cashews in a food processor until finely chopped. Empty into a bowl.
  2. 2. Place dates in food processor and grind until chopped into smaller pieces.
  3. 3. Add cashews back to processor with dates, add pinch of salt. Blend together.
  4. 4. Form in to bars or press mixture down on a board and slice into bars. Store in to an air tight container or wrap individually and place in fridge.
