These delicate cake like cookies are glazed with icing & topped with sprinkles. These are traditionally an Italian cookie known as "Angeletti cookies" and a Christmas tradition. They're easy to make & take bugger all time to cook, plus fun for the kids to get involved & choose different colour sprinkles

Ingredients

  • 250 gm melted butter
  • 1.33 cup white sugar
  • 0.5 teaspoon vanilla extract
  • 2 eggs
  • 2 cups plain flour (plus extra to roll in)
  • 2 teaspoons baking powder
  • 1 decent pinch sea salt
  • 1.33 cup white sugar - glaze
  • 0.5 teaspoon vanilla extract - glaze
  • water - glaze
  • sprinkles - glaze (optional)

Angeletti cookies Directions

  1. 1. Heat oven to 180. Line 2 baking trays with baking paper.
    2. In a bowl whisk eggs, add butter, sugar and vanilla. Mix well. Add flour, baking powder & salt. Mix until combined. Don't over mix.
    3. With floured hands roll level teaspoons of dough into balls & place on baking trays. Repeat with remaining mix. Leaving a 2cm gap between balls. Cook until pale & golden. Set on a wire rack to completely cool.
    4. Make the glaze. In a small bowl whisk sugar, vanilla & 4 tablespoons water. Add extra water as needed or until the mixture becomes thick & glaze like.
    5. Dip the top of each cookie into glaze & add sprinkles to cookies if using. Set the cookies in an airtight container. They will last up to 5 days
