Ingredients

  • 2 large potatoes, washed
  • 400 gm lean beef mince
  • 0.5 punnet cherry tomatoes, quartered
  • 2 spring onions, thinly sliced
  • 2 tablespoons fresh coriander, finely chopped
  • 1 tablespoons cajun spoon
  • 1 tablespoon minced garlic
  • 2 tablespoons greek yoghurt
  • 1 avocado, deseeded, diced
  • Cracked pepper
  • Olive oil spray

Baked potato with mexican fillings Directions

  1. 1. Preheat oven, with a fork put small holes all through potatoes. Cover each with foil & bake for 1 hour.
    2. Heat a large frying pan with oil, slow cook mince, adding garlic, pepper, 1/2 tablespoon Cajun spice. Little bit of water so it doesn't dry out.
    3. Mix tomatoes, avocado, spring onions & coriander in a bowl.
    4. Once potatoes are cooked, cut down a cross in the centre but not touching the bottom. Place mince on top, add fresh ingredients on top & serve with Greek yoghurt. Garnish with coriander.
