Banana fritters


Just forget about the poor presentation for a second and imagine how good these banana fritters taste. I was pleasantly surprised.. I had good intentions to use up my bananas but these warm, crunchy, flavoursome & delicious fritters won me. Could've been yummy with some vanilla icecream or yoghurt.. NOM NOM NOM

  • 1 cup plain flour
  • 1.25 teaspoon baking powder
  • 0.25 teaspoon sea salt
  • 1 egg, whisked
  • 2 cups milk
  • 3 bananas, mashed
  • 1 tablespoon lemon juice
  • 1 tablespoon cinnamon
  • 2 tablespoons icing sugar
  • 1 cup Oil for frying

Banana fritters Directions

  1. Heat oil in a deep fryer or just a shallow pan until hot / bubbling.
  2. In a large bowl mix flour, baking powder and salt.
  3. In a separate bowl mix egg, milk and stir until combined. Add into flour mix. Stir in bananas and lemon juice. Lastly, stir in cinnamon.
  4. Either roll into balls or spoon mixture straight into pan in small batches.
  5. Drain on paper towels and sprinkle with icing sugar.

Recipe notes

TIP: Serve with icecream or yoghurt.
