Banana, walnut & chocolate cookies


What else do you do on a rainy day? Bake of course..  These are a great way to get rid of some of those old odd bananas and taste soooo yummy.

  • 1.5 cups plain flour
  • 1 teaspoon sea salt
  • 0.5 teaspoon baking powder
  • 0.75 cups melted butter (1 1/2 sticks)
  • 1 cup brown sugar
  • 1 egg
  • 1.5 teaspoons vanilla extract / essence
  • 0.5 cup mashed banana (about 1 large)
  • 1 cup rolled oats (optional)
  • 1 handful choc chips
  • 1 large handful crushed walnuts

Banana, walnut & chocolate cookies Directions

  1. Preheat oven to 180 degrees and line 2 baking trays with baking paper.
  2. In a bowl stir through the flour, salt, baking powder and set aside. In a separate bowl place butter and sugar. Using an electric mixer, mix until pale and fluffy. Add egg, vanilla and mix until combined. Add in banana and mix again.
  3. Add flour mixture to banana mixture and mix until combined. Stir in chocolate and walnuts with oats if using.
  4. Using an icecream scooper or a deep spoon, drop mixture on to baking trays about 2 cm apart.
  5. Place in oven and bake until golden brown and just set for approximately 12-15 minutes, depending on oven. Remove from oven and set aside to cool on a wire rack.
  6. Makes 20.

Recipe notes

TIP: Can be stored in an air tight container for atleast 2 days (if they last that long in your house)
