Zucchini and bacon slice

This easy savoury slice is the perfect way to hide or use vegetables if needed. It makes a great lunch alternative in kids lunch boxes or to take to work as you can eat it cold or warm.

Ingredients

  • 3 zucchinis, grated
  • 2 carrots, grated
  • 1 brown onion, finely diced
  • 200 gm bacon, rind removed and finely diced
  • 1 cup shredded cheese
  • 1/2 cup plain flour
  • 5 eggs, whisked
  • 2 tablespoons minced garlic
  • Pepper and salt

Zucchini and bacon slice Directions

  1. Preheat oven to 180 degrees and line a 20cm x 20cm baking dish with baking paper.
  2. In a non stick fry pan, spray with oil. Cook onion until soft and add bacon with one tablespoon garlic. Cook for about 5 minutes. Remove and set aside to cool.
  3. In a bowl add all ingredients and mix well.
  4. Pour ingredients into pan, smooth out and place in oven for 50 minutes or until it is golden and is firm to touch.
  5. Remove, let it cool slightly and slice up.
  6. Serve with a fresh garden salad.

Recipe notes

TIP: Add other ingredients such as parsley, spring onions, mushrooms etc.

Can be sliced in to small squares and served as finger food.

Store in fridge for up to 5 days. You can freeze but can be a little soft and mushy.
