Ingredients

  • 3 ripe bananas, mashed
  • 1.5 cups plain flour
  • 0.75 cups raw sugar
  • 2 tablespoons melted butter
  • 2 tablespoons milk
  • 1 egg
  • 3 teaspoons baking powder
  • 1 handful crushed walnuts

Ingredients - Cream cheese icing

  • 250 gm cream cheese, softened
  • 1 tablespoons lemon juice
  • 1 teaspoons vanilla extract
  • 0.33 cup caster sugar
  • Cinnamon for sprinkling (option)

Banana and walnut muffins with cream cheese icing Directions

  1. Preheat oven to 180 degrees. Grease muffin trays.
  2. In a large mixing bowl, using an electric beater, beat butter and sugar until combined, add egg and mashed bananas until well combined.
  3. Add flour, baking powder, milk and combine well. Fold in walnuts.
  4. Spoon mixture in to greased muffin tin holes. Place in oven for approximately 18 - 20 minutes (depending on oven) place a knife or skewer through the middle of a muffin and if knife comes back clean they're ready to remove.
  5. Set aside to cool for a few minutes then place on a wire rack to cool.
  6. Cream cheese icing:
  7. Using an electric beater, beat all ingredients until well combined. Spoon or pipe mix over muffins. Sprinkle with cinnamon.

Recipe notes

TIP: Wait until muffins are completely cool before putting on icing.
