Beef and potato curry

This fragrant, warming curry is only mild and will be on your table prepped and cooked with 35 minutes. Its a great mid week meal. Its perfect if you need to cook a big batch and freeze for those times you are busy and need something in a hurry.

Ingredients

  • 500 lean beef strips
  • 400 ml evaporated coconut milk or plain coconut milk is fine
  • 2 medium brown onions, diced
  • 3 tablespoons massaman curry paste
  • 600 gm potaotes, peeled and diced in to small chunks
  • 2.5 cups boiled rice
  • Olive oil spray

Beef and potato curry Directions

  1. In a non stick fry pan, spray with oil. Add onion and sauté for a few minutes. Add beef strips, slightly browning off. Add curry paste and stir through.
  2. Pour in coconut milk, potatoes and cover with lid. Cook for 20 minutes or until beef and potatoes are tender.
  3. Divide rice between bowls and spoon beef mixture over rice.
