Walnut and date muffins


These taste better then they sounds, absolutely delish. Another simple dessert that's great to freeze or have as a lunch box snack.

  • 1.5 cups muesli
  • 1 cup plain flour
  • 2 teaspoons baking powder
  • 1 teaspoons bicarb soda
  • 150 gm butter, melted
  • 0.25 cup brown sugar
  • 2 tablespoons honey
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 0.67 cup sour cream
  • 1 cup walnuts, chopped
  • 12 dried dates, pitted and chopped

Walnut and date muffins Directions

  1. Preheat oven to 180 degrees. Line 12 muffin trays with paper cases or spray with oil.
  2. In one bowl mix muesli, flour, baking powder and bicarb soda then stir.
  3. In a large bowl add butter, brown sugar, honey, salt, cinnamon and using an electric beater mix until creamy. Slowly add in eggs, keep beating then add in sour cream. Pour in muesli mix and stir until blended. Fold in walnuts and dates.
  4. Divide batter evenly amongst muffin holes. Bake for 15 - 20 minutes depending on oven or until muffins are golden. Use a toothpick to stick in the middle to make sure they are fully cooked. Toothpick should come out clean.
  5. Remove from oven and cool on a rack.  

Recipe notes

TIP: To make sure dates are nice and soft you can place them in a heat proof dish, pour boiling water over them. Leave to soak for about 5 minutes. Drain water and your dates will be nice and soft.
