Banana and sultana loaf


I love when you make something for the first time and it tastes better then you hope. Well this was one of those times. Wont let you down. Goes great with a cup of tea.

  • 2 cups self raising flour
  • 1 teaspoon bicarb of soda
  • 1 pinch salt
  • 1 teaspoon cinnamon
  • 0.5 cup sugar
  • 0.5 cup sultanas
  • 2 eggs
  • 1 cup light milk
  • 3 bananas, mashed
  • 1 handful walnuts, roughly chopped

Banana and sultana loaf Directions

  1. Preheat oven to 180 degrees. Line a loaf tin with baking paper and set aside.
  2. In a large mixing bowl,  add sifted flour, add bi-carb soda, salt, cinnamon into a bowl. Stir in sugar. In a separate bowl, beat eggs, milk, and bananas until combined. Add dry ingredients into wet ingredients and beat until smooth. Stir in sultanas and walnuts.
  3. Pour mixture into loaf tin and place in oven to bake for 40-45 minutes or until a skewer inserted into the centre comes out clean and outside is golden.
  4. Remove and place on wire tray to cool.  

Recipe notes

TIP: Taste great with out walnuts and sultanas if you cant eat them.
