Cheese and sundried tomato muffins

  • 1 cup plain flour, sifted
  • 1 teaspoon baking powder
  • 1/2 cup sundried tomatoes, finely chopped
  • 1 teaspoon mixed herbs
  • Pepper and salt
  • 1 teaspoon minced garlic
  • 100 gm feta, crumbled
  • 1 cup shredded cheese
  • 1 egg, whisked
  • 1/2 cup water
  • 1/4 cup milk
  • 1/2 cup sundried tomato oil (just tip from jar)
  • 1 spring onion, thinly sliced

Cheese and sundried tomato muffins Directions

  1. Preheat oven to 180 degrees. Line 9 muffin holes with cases or grease well if not using cases.
  2. In a large bowl mix flour, baking powder, both cheeses, sundried tomatoes, salt and pepper, spring onion and garlic.
  3. In a jug combine egg, milk, water and tomato oil. Mix well.
  4. Pour wet ingredients in to the dry ingredients. Mix all ingredients until well combined. Spoon evenly into muffin holes. Place in oven to bake for 15 minutes or until golden and firm. Serve with a side salad.
