Chewy Anzac Biscuits


In honour of Anzac Day, how could I not bake the traditional Anzac biscuit. These humble biscuits play a big part in our history & will continue to be baked for many more years. Lest we forget!!

  • 1 cup plain flour
  • 2 level teaspoons ground cinnamon
  • 1 1/3 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup caster sugar
  • 1/4 cup brown sugar
  • 125 gm butter, chopped
  • 1/4 cup golden syrup
  • 1.5 teaspoons bicarbonate of soda
  • 50 ml water (more if needed)

Chewy Anzac Biscuits Directions

  1. Pre heat oven to 160 degrees and line two baking trays with baking paper.
  2. In a bowl combine flour, both sugars, cinnamon, oats and coconut mix. Mix well.
  3. In a small non-stick frypan add butter, golden syrup and bicarb soda over a low - medium heat. Cook until butter is melted and stir. Add immediately to dry ingredients. Using a spoon stir well until combined. Pour in water and mix again.
  4. Using wet hands grab small handfuls of mixture and roll into balls. Place on the tray about 4cm apart. Slightly flatten. Place in oven for 15 minutes for a chewy biscuit or 20 minutes for a hard biscuit.
  5. Remove from oven and set aside to cool.

Recipe notes

TIP: Rolling the mixture with wet hands helps the mixture from sticking.
