Ingredients

  • 1 large (600gm) beetroot
  • 1.5 teaspoons minced garlic
  • 100 ml thick greek yoghurt
  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoons red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoons fresh dill, finely chopped

Beetroot tzatziki Directions

  1. Preheat oven to 180 degrees. Wrap whole beetroot in alfoil and place in oven for 1 hour or until tender.
  2. Remove from oven and let it cool. Peel off skin and grate beetroot in to a bowl.
  3. Add all ingredients and mix until well combined.
  4. Serve with crackers.
