Bacon and cheese croquettes


These croquettes are golden, crunchy, tasty and fun. They will not last long on the table.

  • 600 gm potatoes, peeled, washed and diced
  • 2 tablespoons milk
  • 2 tablespoons butter
  • Pepper and salt
  • 6 rashers bacon, rind removed and diced
  • 1 egg yolk
  • 2 shallots finely chopped
  • 3/4 cup plain flour
  • 80 gm vintage cheese, cut into 5mm cubes
  • 1 1/2 cups bread crumbs
  • 1 egg
  • 1/4 cup milk
  • Vegetable oil for shallow frying
  • Sweet chilli sauce to serve
  • 2 teaspoons minced garlic

Bacon and cheese croquettes Directions

  1. Make mashed potato first by bringing water to a boil. Place potato in and cook for 8-10 minutes or until tender. Drain water and return back to pot. Add milk, butter and season with pepper and salt. Mash until soft.
  2. Heat a medium non stick fry pan over medium heat. Add bacon and cook until crisp. Transfer to a plate lined with paper towel to drain.
  3. Place potato, egg yolk, onion, bacon, garlic and 1/4 cup flour into a bowl. Mix to combine. Shape heaped tablespoons of mixture into 20 balls. Push a cube of cheese into centre of each ball, shape around cheese to enclose.
  4. Place remaining flour on a large plate. Place breadcrumbs on another large plate. Whisk egg and milk together in a shallow bowl. Roll croquettes in flour, dip in egg mixture then coat in breadcrumbs.
  5. Pour enough oil into a medium, frying pan to come up 5mm of pan. Cook croquettes in batches, turning 3-4 times or until golden. Using a slotted spoon, transfer to a plate lined with paper towel. Repeat with remaining mix.
  6. Serve with sweet chilli sauce and salad.
