Guilt free banana bread


Doesn't get much better then guilt free banana bread. This is one of the best banana breads ive tried. It was soft, moist and tasted better knowing it wasn't so bad for me.

  • 1/3 cup high quality vegetable oil or coconut oil
  • 1/2 cup canadian maple syrup
  • 2 eggs .
  • 1 cup ripe bananas mashed (i used 3 medium sized bananas)
  • 1/4 cup milk of your choice
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 teaspoons salt
  • 1/2 teaspoons ground cinnamon
  • 1 3/4 cup whole wheat flour (self raising if you dont have it)
  • 1/4 cup crushed walnuts (optional)

Guilt free banana bread Directions

  1. Preheat oven to 165 degrees. Line a loaf tin with baking paper and set aside.
  2. In a large bowl beat oil and maple syrup together. Add eggs and beat well. Add in mashed bananas and milk. 
  3. Add baking soda, vanilla extract, salt and cinnamon and mix until blended. Then stir in flour until combined. If you are adding in nuts, add in now. 
  4. Pour mixture into tin and place in oven for 45-55 minutes or until a skewer inserted in centre comes out clean. Let the bread cool in tin for 10 minutes then transfer to a wire rack to cool. Serve or freeze for a later date.
