Sweet potato bolognese splits


These will not disappoint. Great alternative to pasta. Bursting with flavour and will have your taste buds dancing. Yuuuuum!

  • 4 small - medium sweet potatoes
  • 600 kilo lean beef mince
  • 1 jar tomato pasta sauce
  • 2 teaspoons tomato paste
  • 1 teaspoons sugar
  • 1 brown onion, diced
  • 2 teaspoons minced garlic or fresh
  • 2 teaspoons fresh or dried basil / parsley
  • Pepper and salt
  • Olive oil
  • 1 cup shredded cheese
  • Parmesan cheese (optional)
  • Extra herbs to garnish

Sweet potato bolognese splits Directions

  1. Turn oven to 200 degrees and line a baking tray with baking paper. Using a fork prick each potato all over. Place on tray and drizzle oil over and season with pepper and salt. Place in oven to cook for 45 minutes. 
  2. Meanwhile in a large frying pan add oil, onion, garlic, sate for adew mins or until soft. Add 2 teaspoons tomato paste and mix through onion and garlic. Add mince and brown off. Pour in pasta sauce and mix. Add 1 teaspoon sugar. Fresh or dried basil and stir through. Cook for 20 minutes. 
  3. Once potatoes are cooked remove from oven. Using a knife run down the centre long ways and split but not right down to the bottom. Spoon mince mixture into each potato. Scatter shredded cheese over the top and place back in oven for 5 minutes or until golden. Remove and garnish with fresh basil or parsley and parmesan.
