Balinese chicken curry


Creamy & vibrant Balinese chicken curry is packed full of flavours. It was pretty time friendly & considering it did have a few ingredients it shouldn't put u off as it was really worth it. Happy days

  • 600 gm chicken breast / thigh sliced into chunks
  • 2 tablespoons peanut oil
  • 2 tomatoes, diced
  • 1 cup chicken stock
  • 400 ml coconut milk / cream
  • 1 tablespoon lime juice
  • 1 large brown onion, diced
  • 0.25 cup crushed nuts
  • 2 tablespoons minced garic
  • 1 red chilli crushed
  • 1 tablespoon water
  • 1 tablespoon coriander (dry is fine)
  • 1 teaspoon tumeric
  • 1 teaspoon cardamom
  • 0.5 teaspoon black pepper
  • 1 tablespoon ginger
  • 1 teaspoon cinnamon

Balinese chicken curry Directions

  1. 1. To make the spice paste, use the following ingredients and place in a food processor. Onion, peanuts, garlic, ginger, chilli, water, coriander, cumin, turmeric, cinnamon, cardamom and pepper. Blend until smooth paste forms.
  2. 2. In a non-stick fry pan add oil, add the paste and chicken. Coat the chicken in the paste and cook for about 2 minutes. Add the tomatoes and chicken stock. Bring to simmer. Reduce heat to low and cook. Let it sit for about 20 minutes then add lime juice.
  3. 3. Taste and season with salt and pepper. Divide between plates and serve with rice and veggies.
