Baked eggs with chorizo


I'm loving baked eggs for brekkie atm & all the different combos & flavours you can have. Today was eggs with chorizo, feta, English spinach & cream with wholemeal toast

  • 2 handfuls english spinach
  • 4 eggs
  • 1 chorizo, sliced
  • 125 ml philadelphia cooking cream
  • 50 gm feta cheese, crumbled
  • 100 gm mushrooms, sliced
  • 1 teaspoon minced garlic
  • Pepper and salt

Baked eggs with chorizo Directions

  1. 1. Preheat oven to 180 and spray 2 ramekins with oil.
  2. 2. In a heatproof dish, place spinach in and cover with boiling water. Leave for adew mins to wilt, remove and drain excess water. Roughly chop and place in bottoms of ramekins.
  3. 3. In a non-stick frypan add garlic, mushroom and chorizo. Sauté for a few minutes.
  4. 4. In a bowl add chorizo mix with feta and stir in cooking cream. Pour into ramekins. Crack eggs over mix.
  5. 5. Place ramekins in oven and cook until the egg whites are completely cooked. Garnish with some spring onions and season with pepper and salt. Serve with toast.
