Bacon, egg and feta tart


Breakfast is served. Start your day in style with this bacon, egg & feta tart. It. had a nice crunch from the pastry, great flavour combos from the bacon, feta, garlic & hit the spot nicely.

  • 2 puff pastry sheets, thawed
  • 2 eggs
  • 2 rashers bacon, rind removed and diced
  • 50 gm feta cheese, crumbled
  • 6 cherry tomatoes, quartered
  • 1 spring onion thinly sliced
  • 1 teaspoon minced garlic
  • 1 tablespoon grated parmesan
  • Pepper and salt
  • Olive oil spray

Bacon, egg and feta tart Directions

  1. 1. Preheat oven to 180 & line 2 trays with baking paper. Using a bowl as a guide. Cut around the bowl making a circle about 13-15cm round. 2cm from the edge using a knife make another circle but don't touch the bottom. Place on baking tray & fork all over inside smaller circle. Place in oven for 8mins or until sides are raised
    2. Meanwhile in a small pan cook bacon until crisp. Remove & set aside.
    3. Remove pastry from oven. In a small bowl mix garlic, tomatoes, chives & pepper & salt. Crack egg on top. Return to oven & cook for 12mins or until egg is cooked.
    3. Remove & grate cheese over tarts.
